Breakfast of Champions #1

Good morning!

Here’s a healthy breakfast to start the day.

The Menu

Fresh grilled salmon (leftover from dinner)

Green smoothie *

Local, fresh blueberries

Coffee with almond milk

Water

 

*Green smoothie recipe

2 cups Organic Girl Super Greens! (red & green Swiss chard, tat soi, argula & spinach)

1/3 large apple

2 tbsp chia seeds

1 tbsp slivered almonds

1 tbsp Zante currants

1/2 cup unsweetened almond milk

I sometimes add 1-2 tbsp of almond butter, some Italian parsley, avocado, walnuts, pine nuts.  It depends on what is in my pantry.  The vital ingredients are the greens and chia seeds.  Right off the bat, I have eaten some greens and chia which provide a storehouse of nutrients.

I add an apple or banana for sweetness and nuts or peanut butter for protein.

A liquid is needed to blend everything.  I use unsweetened almond milk but you could use yogurt with a little water or?

Organic Girl packages several varieties of greens.  I always choose dark greens such as spinach and chard.

As this is a rather large breakfast, I  save part of the berries and a glass of the smoothie for a snack.

Right now, we have so much fresh salmon in the grocery stores.  So, I eat salmon often! À la mode de Marie Antoinette…let them eat salmon!

 

The Setting

I set the table and enjoy breakfast with no distractions.

I used to watch the news which was not a good idea!

I find that even a podcast takes my mind off the food.

I want to enjoy every bite and sip and stay in the moment.

It is nice to look outside my window and see the occasional walker.

It’s all part of my plan to eat healthier, eat slowly, eat less, and be mindful.

  1. It looks lovely Lori, and I bet it all tasted great. I’ve taken years to realise how beneficial mindful eating is. Now I just have to extend the practice to other parts of my life. 🙂

  2. Perfect smoothie recipe Lori. I also add dandelion greens and low fat Kefir.
    My little dog, Ivy, listens for the sound of my NutraBullett and out she comes for a taste of this most excellent breakfast .

        I have been buying the greens at the local Co Op and now Fred Meyer is also carrying organic dandelion greens. Purple kale is also a wonderful addition to the smoothie.

  3. Healthy I like. Your breakfast would be too much for me to eat, I think. (sounds great!) Fruit, nuts, calcium needs with yoghurts and light cereals now for us. Chocolate yes indeed later in the day (dark of course) and red wine with dinner. Lots of Greens either in salads lunch or with evening meal. Thanks for recipe. Cheers.
