My special friend makes all my favorites from creamy scrambled eggs, crisp bacon to lox and bagels. There are healthy servings of roasted or grilled vegetables, fresh fruit and to top it off, a chocolate croissant sometimes served with ice cream! Needless to say, it is my main meal of the day.
Fresh flowers, a wonderful view and soft music playing.
Dining with my friend makes me slow down and count my blessings.
Even in the time COVID 19.
Especially in the time of COVID 19.
Peace,
Lori
*Not having to prepare or clean up afterwards is the icing on the cake! (I do have food on my brain!)
In addition to running the world this morning, I found time to roast vegetables.
My line up included carrots, brussel sprouts, asparagus, beets (both red and yellow), red bell peppers, and eggplant.
I love roasted vegetables and snack on them right out of the oven.
I sometimes place a melange of cooked vegetables on a plate, grate parmesan cheese on top and pop in the microwave or under the broiler to melt the cheese. One of my favorite meals!
Or, I toast some hearty, dark bread and spread with hummus or avocado and then top with roasted vegetables. On top of that I grate some Parmesan cheese and melt it.
Always the cheese! I buy the large wedge from Costco. I tell myself that Parmesan cheese is OK as it is not a fatty cheese.
Kudos to my Mother whose gardening skills kept our table and freezer full of vegetables all year long.
Every evening, I bring in the nine cushions from my outdoor furniture.
It doesn’t take very long to bring them in and stack them on my dining room floor.
In the morning I take them out again so that I can enjoy my patio furniture during the day.
This is something new that I’ve started after prowlers began to visit in our neighborhood. I have a video clip of one guy pawing through my pillows and smelling them.
Today was a new adventure for me in food shopping.
On the red tray is my haul from Coquine , a delightful French-inspired restaurant in SE Portland.
As Coquine is open for take out only. Customers can buy prepared entrees, baked goods and other delicious items from Coquine.
Also, Coquine allows their farmers and other food purveyors to sell direct through their restaurant. The menu is quite extensive with produce, meat, seafood, coffee, tea, eggs and dairy.
It was hard to just order a few things but since I crave vegetables, I opted for a fresh produce bag.
Since I can’t always find locally roasted coffee, I added a pound of Coava Coffee beans to my order. Coava describes their coffee as “northwest coffee roaster notoriously fueled by good folks and Led Zeppelin”. I like their coffee and was happy to find it on the Coquine take out menu. I used to walk my dog Ginny and pop in to make a quick deposit, have a cup of tea or coffee while Ginny enjoyed a biscuit and water inside the lobby. I knew the tellers and they knew me. It was one of Ginny’s favorite stops.
Another aspect of my life that I have to plan…
Really, it’s not such a big deal. Just another change to my way of life.
I have a somewhat smart home…thermostat, doorbell, mesh wifi, and security system all from Google except for my August Smart Lock.
I can adjust my temperature, see who’s at my door, unlock the door… all from my phone. The security system gives me a lot of comfort.
Every month, I receive a Nest Home Report from Google.
It tells me how much energy I saved the previous month among with other useful information such as
Grow it Yourself
This month, we’re using leftover produce to grow new, healthy plants. Place leaves from celery or romaine into water on the windowsill, or plant potato skins or seeds from tomatoes into soil and watch it all grow. ~Google
I am going to try all four-celery, romaine, potato skins, tomato seeds- and see what happens.
